A little while back my family went out for breakfast. The food was all delicious. We had hot pancakes and french toast with gooey caramel syrup. Like that wasn’t enough, there was fresh strawberry butter to melt onto the french toast. Of all the scrumptious tastes before me, there was one that stood high above the rest. The bacon. This was no ordinary bacon. It was like candy bacon. While I am pretty good at disciplining myself when it comes to other candy, I could not stop craving more and more of this bacon covered in sticky brown sugar perfection. The craving didn’t stop when we left the restaurant either. It would not subside until it was fed more candy bacon. “More Bacon” it would shout in a sinister raspy voice. I had to appease it. I found that the recipe from Paula Deen on the food network website and did the trick nicely. It only has 3 ingredients so it is easy to whip up. At first I was hesitant to put in the chili powder because I didn’t want them to be spicy but you can’t even taste any heat, just pure heaven. I doubled up the recipe to use it with a full package of bacon.
1/4 cup firmly packed brown sugar
2 teaspoons chili powder
8 slices thick-cut bacon
Preheat oven to 400 degrees F.
Line a rimmed baking sheet with aluminum foil. Set a cooling rack inside the prepared pan and set aside.
In a shallow dish, combine the brown sugar and chili powder. Dredge the bacon slices in the brown sugar mixture and arrange the bacon on the rack. Bake in the preheated oven until crisp, about 20 minutes.
