Breakfast food is just too good to only have during the morning hours. My ideal breakfast would be eggs, candy bacon, hash browns, french toast with fresh fruit. This recipe takes care of 2 of those 5 things and sneaks in a vegetable. Unfortunately we are more of a cold cereal in the morning family so I need to have a chance to eat breakfast yummies sometime. Enter the Potato Zucchini Hash. One of my favorite things about this dish is that it includes a vegetable which makes it a good choice for a more balanced dinner. The recipe comes from Martha Stewart and it is simple to make.
You can serve it with a fried egg on top or to the side or just leave out the egg all together. I personally really like it with the egg. It is a great side dish for a breakfast meal or can constitute the meal itself having a starch, a protein and a vegetable. The recipe calls for seasoning with salt and pepper but I like to cut down the amount of regular salt and add some Lawry’s seasoned salt to it as well. I am also not an onion fan so I skip the onion.
