When you don’t have time to make a cake (or cupcake in this case) from scratch, a good alternative is to focus on the frosting. That way the cupcakes still have that homemade touch. This time around I made a chocolate cupcake from a cake mix and topped it with a big helping of Oreo Cream Cheese frosting. Oh ya.
Oreo Cream Cheese Frosting
8 oz. Cream Cheese (softened)
2 Tbs. Unsalted Butter (softened)
1/4 tsp. Salt
1 tsp. Vanilla
3 1/2 Cups Powdered Sugar
12 Oreos (finely crushed)
4 Oreos (finely crushed and reserved for the topping)
Cream the softened cream cheese, softened unsalted butter, salt and vanilla together. Once smooth, gradually add the powdered sugar. Beat until combined. I crushed the Oreos in a food processor so that they were a fine consistency. Add 12 finely crushed Oreos to the cream cheese frosting mixture. Crush 4 more Oreos and use them as a topping for the frosting if desired.
I recently used this Oreo Cream Cheese Frosting recipe for my daughters 5th birthday party. I made these cute personalized watercolor pennant flags as cupcake toppers. The pennants are made from the Flag Pics shapes in the Silhouette Online Store. I cut them out with my Silhouette CAMEO and then watercolored them in a variety of colors. I have been working on my hand lettering and I hand lettered each girls name onto the cupcake topper. The girls loved looking for their own personal cupcake!
