What do you do with leftover roast beef? I have a few go-to recipes and this one is probably the favorite of the family. When I make roast beef, I cook it in the crock pot and then add red potatoes and carrots at the end. I can usually get 3 meals out of it if I am creative. This leftover roast beef stew is the last meal I make since it utilizes the meat, potatoes and carrots and not just the meat. It is a quick and EASY dinner recipe. I have to apologize for the picture. You see by the time I realized I hadn’t taken a picture yet, everyone had gone back for seconds and thirds and I was left with the dregs to photograph. The actual stew is very hearty and packed with meat, potatoes and carrots.
Leftover Roast Beef Stew
Leftover Cooked Roast Beef (Use whatever you have left)
Leftover Cooked Potatoes (Use whatever you have left)
Leftover Cooked Carrots (Use whatever you have left)
2 Cans Beef Stock
1 Can Water
1 Can Diced Tomatoes (You can also use fresh)
1 tsp. Dried Oregano
1 tsp. Dried Basil
Combine everything in a pot on the stovetop and cook until heated through. Top with Sour cream and shredded cheddar cheese if desired.
