This recipe was done at my husband’s request. He had purchased a big bag of protein powder and wanted to try out some protein recipes. These protein bars were one of the first protein recipes that I tried and they were surprisingly delicious and addictive! They do not taste like the store bought protein bars. They have the texture of a dense muffin and are hearty and filling. I have made them a few times since and have adjusted the recipe to use more common things that I have in my pantry regularly.
Chocolate Peanut Butter Swirl Protein Bars

1 Cup Oatmeal (Quick Oats)
1 Cup Milk
1 Tbsp Vanilla
2 Scoops (2/3 Cup total) Chocolate Protein Powder
1 Cup Sugar
1/2 Cup Milled Flax Seed
4 Tbsp Flour
2 Tbsp Cocoa Powder
1 1/2 tsp Baking Powder
1/4 tsp Salt
3/4 Cup All Natural Peanut Butter
Preheat oven to 350 degrees. Prepare a 9×13 glass pan with cooking spray. Combine oatmeal and milk in a microwave safe bowl and microwave for 6o seconds. Stir when done and allow to cool. Once cooled, mix in the eggs and vanilla to the oatmeal mixture. In a separate large mixing bowl combine the protein, sugar, flaxseed, flour, cocoa, baking powder and salt. Mix the oatmeal mixture with the dry ingredients until completely moistened. Pour mixture into the prepared pan. In a separate microwave safe bowl, heat the peanut butter for about 45 seconds or until the peanut butter is soft and melted. Drop spoonfuls of the softened peanut butter onto the protein bar batter and swirl the peanut butter around evenly with a knife. Bake at 350 degrees for 20-25 minutes or until toothpick inserted into the center comes out clean. Cool completely and then cut into squares.
We have taken these camping, on vacations, and even just eaten them as snacks. They taste like a dessert but there is less guilt when you eat half the pan. Eat up friends!
