I actually first made these Green Mint Oreo Rice Krispie Treats at Christmas time when I did our annual Grinch Party but I thought they could totally work for St. Patrick’s Day too! They are made with the Guittard Green Mint Chips and follow the same recipe that I used for the White Chocolate Oreo Rice Krispie Treats (with the exception of using green mint chips instead of white chocolate). I wasn’t sure of the flavor combinations when I was making them but they totally work! Everyone raved about them and were surprised how much they liked them! This recipe was done at my husband’s request. He had purchased a big bag of protein powder and wanted to try out some protein recipes. These protein bars were one of the first protein recipes that I tried and they were surprisingly delicious and addictive! They do not taste like the store bought protein bars. They have the texture of a dense muffin and are hearty and filling. I have made them a few times since and have adjusted the recipe to use more common things that I have in my pantry regularly. A little while back I tried out a recipe for Eggless Cookie Dough. It tasted like dirt. So when my husband requested brownies topped with ice cream and cookie dough for his birthday, I was not excited. I needed a better recipe. I don’t know why but every time I make brownies I feel like I have to add something to them. Don’t get me wrong, there is nothing bad about a really yummy gooey plain brownie but most of the time I am making them from a mix and a plain ol’ from a carton brownie just doesn’t cut it for me. I have tried sprucing them up by wrapping them individually in wax paper when I had nothing to put in them but this time I did have some extra cream cheese so I decided to enhance my brownie mix by making Cream Cheese Chocolate Chip Brownies. I have tried this same recipe using an 8×8 pan and a 9 1/2 x 11 pan. They both work. The cream cheese mixture is thicker with the 8×8 pan.
Cream Cheese Chocolate Chip Brownies
8 oz Cream Cheese (softened)
1/3 C. Sugar
1 Egg Yolk
1 tsp. Vanilla
1/2 C. Chocolate Chips
1 Brownie Mix (with the ingredients needed to prepare it)
Prepare the brownie mix per package instructions. Line your pan with parchment paper so that the paper overlaps the sides making it easy to get the brownies out and cut them. Spray the paper lined pan with cooking spray. Pour brownie mix into pan. In a separate bowl beat softened cream cheese and sugar. Add the egg yolk and vanilla. Mix until combined. Add the chocolate chips and mix until combined. Spoon dollops of cream cheese mixture into the brownie mixture. Use a knife to swirl the cream cheese mixture into the brownie mixture. Bake at 350 degrees for 30-40 minutes or until a toothpick inserted in comes out clean. Allow to cool and then pick up the sides of the parchment paper and pull the brownies out of the pan to cut them.
